Listeria preservative being assessed

Sodium diacetate, a preservative okayed by Health Canada may prevent another Listeria outbreak. When combined with sodium lactate, the preservative is able to restrain the growth of the bacteria.

Sodium diacetate, a preservative okayed by Health Canada may prevent another Listeria outbreak. When combined with sodium lactate, the preservative is able to restrain the growth of the bacteria.

To date, 20 people across the country have died of Listeriosis that was linked to a Maple Leaf Food plant in Ontario.

While scientists say eliminating Listeria is impossible, they believe the preservative would prevent the bacteria from multiplying to a dangerous level.

Maple Leaf Foods is assessing the preservative.
